Raw Vegan Mango Cheesecake Recipe


There’s been quite a buzz about raw vegan food recently, and there are so many images of beautiful raw vegan desserts online I thought I would turn my hand at one. Inspired by my visits to the lovely Chocaffinitea (here!) & my awesome fellow vegan instagramers I thought mango might be fun, and it turned out pretty good – so here’s my recipe for a raw mango desert, easy enough for any other raw virgins out there!!!!

Raw Vegan Mango Cheesecake Recipe

For the base:
1 Cup of your selection of nuts and seeds (I used Brazil nuts & walnuts with sunflower seeds)
8 Dates
1 tsp of water

For the cheesecake later:
1/2 cup of cashew nuts soaked overnight in water (if you haven’t time or forgot to soak, pop them in some hot water for
an hour or more)
1 ripe mango
1 tbsp of water
2 tbsp of coconut oil
1 tsp or small squirt of agave, maple syrup or your choice of sweetener
One lemon for a little lemon juice

1. Blend the nuts for your base into small crumbs, keep and eye on them so they still have a bit of “bite” and don’t turn into a butter. Add in the sunflower seeds and blend for a few seconds so they blend down a little.

2. Take out the nut & seed mix and add your dates to the blender. These can be a little more tricky to blend, so add them
one by one.
3. Add the nut mixture to the dates and combine. If you have ever had a Nakd bar before, that’s the type of consistency you want! If the mixture is stuck, add a teeny bit of water until all is mixed together. You should end up with something like this:

4.Take a freezable container lined with greaseproof paper and press the base mix into the bottom with the back of a spoon.

5.Rinse the soaked cashew nuts and blend until starting to get creamy. This can take a while! If the nuts aren’t getting velvety, add a little more water, a few drops at a time, remember the mango has lots of wetness in it too.

6. Add your slices of mango until you get a consistency like this:

Taste, and add a little squirt of sweetener and lemon juice to get the right flavour for you.

7. Add your coconut oil to the mix, this will make it set better when you freeze the dessert.
8. Once the cheesecake mix is poured over the base, pop in the freezer to set.

All done!

After a couple of hours you will have a simple raw dessert! Just let it soften before you serve.

You can also experiment with other flavours – you might want to add some lime or mint to the mango flavour, or a new fruit entirely – here I used blueberries, worked pretty well but I love my original creamy but refreshing mango one best.



Watch out! Making raw desserts can be addictive! I found myself buying reduced berries after work and then blending like a mad woman all evening!!
